Back in the early 1900s, Arvada Co. a western  suburb of Denver was a famous celery growing region. The chosen variety was Pascal! At harvest in September, the top quality Celery heads were packed in trenches deep enough to cover with thick mulch. they remained there  for 75 days to blanch on their own until they reached a pristine whitened state with outstanding sweetness and flavor. Shipping of the prized celery made it annually to the White House by western rail,  for holiday meals. Fascinated  by this history, We started growing Pascal here in boulder County for CSA members, farmers mkt and local Restaurants bringing back ''mile high ''celery to the front range. Pascal is a dependable celery here.
